Happy 4th of July!!!!!
In previous years I would have indulged in pies, cakes, cookies, or other goodies for my holiday treat. Things have changed in the past few years since going gluten free due to thyroid issues. Of course, my first reaction a few years ago was to quickly run out to buy gluten free brownies, pretzels, and cookies. Let’s face it, the ingredients in those are less than stellar. Basically, I was eating frankenfood. I started reading labels more closely and decided it was much better to start making things from scratch and finding healthier swaps. While everyone loves Cool Whip or Reddi Wip on top of treats, I have fallen in love with my So Delicious, Coco Whip as a healthier swap and love to have it in a parfait with lots of antioxidant and oh so good for you, berries!
